Salad for the season

The summer is approaching here in Provence (the next few weeks we will be in the high-80s!) and with that comes no-bake lunches and simple meals. The easiest salad (some call it a Caprese) for the summer is here. With just a few simple, fresh ingredients you have a salad that packs in a lot of flavor. This one is hard to call a recipe as it really is simply pulling together a few ingredients. I use mozzarella cheese here but burrata would be delicious as well. Single serving would be perfect for lunch or double or triple the recipe and serve as an appetizer for a dinner party.
1 cup cherry tomatoes - the sweetest ones you can buy
1 ball of whole burrata or fresh mozzarella cheese, sliced
1 handful of fresh basil leaves (tear if large)
Balsamic vinegar glaze
Good quality olive oil
Freshly ground black pepper
Place the cheese in a bowl. Cut the cherry tomatoes in half and put around the cheese. Sprinkle the basil on top. Lightly dust with freshly ground black pepper, good quality olive oil and balsamic vinegar glaze. Enjoy in less than 10 minutes!
